Marrying a Jew doesn't automatically make you Jewish; you have to convert, and the rules for that are different in the different branches of Judaism—and Israel does not recognize Palestinian wives at all.

That said, I'd argue you can become Polish by being accepted into a Polish community. Most ethnic groups have ways to accept new members—ethnic groups are like tribes, not races.
